Mother’s Day 2026: Easy One-Pot Lunch Ideas To Give Your Mom A Break From Cooking
Mother's Day in India falls on 10 May 2026. It usually starts with good intentions-flowers, gifts, maybe a sweet message. But the one thing that often gets missed is the simplest one: Giving mom a break from the kitchen.
This year, instead of adding to her workload, the idea is simple-cook something that doesn't turn the kitchen into a mess afterward. One pot meals fit right into that. Less chopping, fewer utensils, and minimal cleanup.
They also work well in Indian homes where pantry ingredients do most of the heavy lifting. Plan a day ahead and choose dishes that can be made in a kadhai, cooker, or deep pot. On that note, here are three easy one-pot lunch ideas you can actually pull off without stress.
Mixed Vegetable Pulao With Homemade Masala
Ingredients
- 1.5 cups basmati rice (soaked)
- 1.5 cups mixed vegetables (carrot, beans, peas, cauliflower, potato)
- 2-3 tbsp ghee
- 1/4 cup cashews
- 1 medium onion (sliced)
- 2 tbsp curd
- 2.5 cups water
- Salt, as needed
- Capsicum (optional, for finishing)
For Homemade Pulao Masala
- 1.5 tsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 8-10 black peppercorns
Whole Spices
- 2-3 bay leaves
- 3-4 cloves
- 2 cardamom pods
- 1 cinnamon stick
Ginger-Chilli Paste
- 1 small piece ginger
- 2 green chillies
How to Prepare
- Dry roast coriander seeds, cumin, fennel, and peppercorns. Cool and crush into a coarse powder to make the pulao masala. Crush ginger and green chillies into a paste.
- Heat ghee in a deep pan and fry cashews until golden. Remove and set aside. In the same pan, add bay leaves, cloves, cardamom, and cinnamon.
- Add sliced onion and salt. Cook until soft. Stir in ginger-chilli paste and the prepared pulao masala.
- Add mixed vegetables and sauté for a few minutes. Then add soaked basmati rice, curd, and water.
- Cover and cook on medium heat until almost done. Add capsicum and fried cashews on top. Let it rest before serving with curd and papad.
Lemon Rice For A Light, Fresh Lunch
Ingredients
- 2 cups cooked rice
- Juice of 2 lemons
- 1 tbsp oil
- 10-15 cashews
- 1 tsp mustard seeds
- 1 tsp urad dal (split white lentils)
- 8-10 curry leaves
- 2 dried red chillies
- 1 tsp turmeric powder
- 1 tsp ginger (finely chopped)
- Pinch of hing (optional)
- Salt, to taste
How To Prepare
- Heat oil and fry cashews until golden. Remove and keep aside.
- In the same oil, add mustard seeds and let them crackle. Add urad dal, curry leaves, dried red chillies, ginger, turmeric, and hing.
- Roast everything on low heat until the dal turns golden.
- Switch off the heat and add lemon juice along with fried cashews.
- Mix this tempering into cooked rice gently. Let it rest for a few minutes so the flavours settle before serving.
Chole Chawal Cooked In One Flow
Ingredients For Chole
- 3 tbsp oil
- 1 onion (chopped)
- 2 small tomatoes (chopped)
- 2 tbsp ginger-garlic paste
- 1 cup overnight soaked chole (chickpeas)
- 1/2 cup soaked rice
- Salt, to taste
- Water, as required for consistency
Spices
- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tbsp Kashmiri red chilli powder
- 1 tsp Kitchen King masala
- Potli (spice bundle):
- 1 inch cinnamon stick
- 2 small bay leaves
- 2 black cardamoms
- 1 tsp black tea leaves
For Tadka / Finishing
- Kasuri methi
- Grated or finely chopped ginger
- Fresh coriander leaves
How to Prepare
- Heat oil in a pressure cooker. Add ginger-garlic paste and sauté for a few seconds until fragrant. Add chopped onions and cook until they turn soft and light golden.
- Add chopped tomatoes and cook until they break down completely. Mix in turmeric, coriander powder, Kashmiri red chilli powder, Kitchen King masala, and salt. Cook the masala until oil starts separating slightly.
- Add soaked chole along with the prepared potli (cinnamon, bay leaf, black cardamom, and tea leaves). Pour in enough water to cover everything. Pressure cook for 5-6 whistles or until the chole is almost done.
- Add soaked rice, adjust water if needed, and cook for 2 more whistles.
- Release steam immediately to avoid overcooking the rice.
- Finish with a simple tadka of kasuri methi and ginger. Garnish with fresh coriander and serve hot.
On Mother's Day 2026, it's all about just removing one responsibility from the day in the life of your mother if not everyday.
These one pot meals keep things simple in the kitchen while still feeling like a proper home-cooked spread. Less washing, less juggling utensils, and more quality time together.
In the end, that's what your mother will mostly remember the day for, the fact that someone made space for a little ease in her routine.
